The majority of Pump Street's chocolate bars are made with just cocoa, cocoa butter and a touch of cane sugar. By adding fewer ingredients to the bars allows the complexity of the bean to shine.

The cocoa beans are from Bachelor’s Hall Estate, Saint Thomas, Jamaica. Pump Street has been sourcing cocoa from Desmond's farm since December 2015. The land there is fertile, potent, with natural springs and four small rivers running through it. It sits below the Blue Mountains of the St Thomas Parish on the south-eastern end of Jamaica. Once one of the top-producing coconut farms in Jamaica, it has also grown bananas and sugar cane but Desmond has been focussing on cocoa and is currently working to access more and more of the trees that are already growing on his land, but in hard to access areas.

Desmond Jadusingh is a force in the Jamaican cocoa industry. He bought back his grandfather's farm from the government in 2002, and has since campaigned for and won the right to ferment and dry his own beans on site and sell directly to chocolate makers like Pump Street. He also helped found the Jamaica Cocoa Farmers Association.

These Jamaican beans have a rich, dark and chocolatey character with fine flavour, heaps of dried fruit jammy-ness and the scent of dark rum.

Pump Street Chocolate is clear about the importance of supporting the cocoa farmers it works with. By sourcing the best beans grown with minimal intervention, and through a transparent, ethical, and sustainable supply chain and direct trade, it is able to pay prices far greater than fair trade direct to its growers. Farmers are able to take home a fair wage and give the same to their team members, and to maintain their land and trees in environmentally responsible ways.

Everything it produces is a reflection of the finest produce, farming and agriculture that surround the brand's location on the Suffolk Heritage Coast.
